ALL THINGS-SMOKED · KNOW YOUR BEEF
BEEF ORIGINS
The story before the smoke.

Trace the provenance, genetics, marbling, and standards behind the beef we choose.
Before the first trim, before the seasoning, and long before the smoker is lit, quality begins with the beef itself.

At All Things Smoked, Wagyu is selected with attention to origin, genetics, marbling, and cut. We source premium Australian Wagyu through respected programs including Stone Axe Wagyu, Cobungra Station, and Margaret River Wagyu, all part of the Stone Axe Pastoral family of brands.

The goal is simple: start with exceptional beef, then let time, smoke, and technique do the rest.
AUSTRALIAN WAGYU, TRACED TO ITS SOURCE
Not all Wagyu is the same.
Stone Axe Pastoral produces Wagyu across several breeding programs throughout Australia, including Fullblood Japanese Black Wagyu through Stone Axe, Wagyu raised at Cobungra Station in Victoria, and Crossbred and Purebred Wagyu through Margaret River in Western Australia.
For All Things Smoked, sourcing changes with availability and the individual cut, but each selection is chosen intentionally.

STONE AXE WAGYU
Stone Axe maintains a 100% Fullblood Japanese Black Wagyu herd, raised across properties in New South Wales and Victoria. The program traces its genetics to registered Japanese Black Wagyu foundation cattle brought into Australia through the United States in the 1990s.
COBRUNGRA STATION
Located in the Victorian Alps, Cobungra Station is one of Stone Axe Pastoral’s premium Wagyu programs. Recent ATS sourcing has included Fullblood Wagyu tri-tip from Cobungra Station, graded at Marble Score 6/7.
MARGARET RIVER WAGYU
Margaret River Wagyu is raised across farms in Western Australia and includes Crossbred and Purebred Japanese Black Wagyu genetics. The program continues to introduce selected Stone Axe Fullblood genetics as part of its breeding program.

WHAT “FULLBLOOD” ACTUALLY MEANS
“
Fullblood” is more than a luxury label.
Under Australian Wagyu Association classifications, a Fullblood animal has a pedigree tracing entirely to registered Wagyu foundation animals with no recorded non-Wagyu ancestry.
FULLBLOOD
Verified Wagyu lineage with no recorded outcrossing to another breed.
PUREBRED
At least approximately 93.75% Wagyu, with documented non-Wagyu ancestry somewhere in the pedigree.
CROSSBRED
Wagyu genetics combined with another breed.
The Australian grading system generally progresses from approximately 50% Wagyu at F1, to 75% at F2, 87.5% at F3, and 93.75% or greater at F4/Purebred levels.
